Some of the best recipes comes from your internal food cravings like this one. I wasn’t sure what I was craving but I knew I wanted something with brie, noodles and fried chicken… If mac and cheese was an Vietnamese dish I would probably use Brie cheese, sesame oil and a dash of fish sauce!

I didn't want to spend hours in front of the oven so we’ll be using my air fryer method & recipe since because it’s quick (about 45 min) and it turned out super crispy!

You might have guessed it from it's name but these delicious noodles originated in Shanghai. This was one of my favorites because for over 13 years I traveled to China for work as a vegetarian. Surprisingly, this popular noodle dish uses only a few household ingredients but it sure does packs in a lot of flavor. Slow-frying and browning the spring onions in oil until crispy infuses the noodles with a very rich savory sauce packed with lots of umami & onion yumminess!

Do you like Chinese style sweet and sour chicken? Well this recipe is sure to please and replaces the chicken with a plant based substitute, golden oyster mushrooms!
These mushrooms are dredged in a flour/egg batter and then deep fried to perfection for that extra crispy crunch. The wet batter creates a nice doughy crust that makes it more fluffy while the chewiness of the oyster mushrooms gives you that mock chicken texture!

This Japanese Shoyu Ramen was created with a homemade shoyu broth using dried shitake mushrooms and some aromatics.
Did you know that ‘Shoyu’ means soy sauce in Japanese? So simply translated, shoyu ramen, is basically ramen with a soy sauce-based broth. The broth is beautifully clear and brown colored and full of umami richness that it’s great without any chicken or beef stock, making it very vegetarian friendly!
