Vietnamese Leveled Up Ramen | Lemongrass Pork Belly With Soy Sauce Ramen Noodles- Recipe

This is my Hella Leveled Up Ramen with Vietnamese Lemongrass & Ginger Pork Belly, Chinese Broccoli, kimchi and Soy Sauce Ramen Noodles.

One of my favorite things to do is to take a regular shelf ramen likes this instant noodle cup from @nongshim deconstruct it then reconstruct it.

VIETNAMESE LEMONGRASS PORK BELLY
INGREDIENTS

1/4-1/2 lb pork belly thin cut slab
2 tablespoons neutral vegetable oil (I used tea seed oil from YouYou)

5 medium cloves garlic (smashed, about 1 1/2 tbs)
1/2 medium shallot onion (thinly sliced, about 1/2 cup)
1 tbs lemongrass (minced)
1 1/2-inch knob fresh ginger (peeled and thinly sliced, about 2 tbs)
1-2 red bird’s eye chiles (loosely chopped)

Kosher salt to taste
1/2 tbs fish sauce
1/2 teaspoon sugar
Freshly ground black pepper


PREPARATION
1. In a large skillet, heat oil over medium high heat until hot, glossy and shimmering. Swirl oil around pan and then add: garlic, onion, lemongrass, ginger, and chiles and sautee until slightly softened and a little browned (about 5 minutes). Remove veggies.

2. Add 1 tbs oil over high heat. Add pork belly and season with salt and pepper. Stir and cook until pork begins to brown (about 3-5 minutes until cooked).

3. Reduce heat to medium, then stir in fish sauce and sugar and add back lemongrass/ginger/chili)

4. Remove off burner and set aside.

VEGETABLES

Chinese Bok choy (few small bunches, washed, drained, cut, & blanched)

SOY SAUCE NOODLE INGREDIENTS
1 tbs light soy sauce
1/2 tbs dark soy sauce
1/2 tbs Maggi
1/2 tablespoon oyster sauce
1/2 tablespoon sesame oil
1/2 tsp white pepper
1 teaspoons sugar
2 tbs water

RAMEN CUP PREPARATION
1. Remove seasoning packets from ramen cup and toss or save for another project.
2. Fill ramen cup with boiling water for 3 min then strain noodles.
3. Prepare Vietnamese soy sauce marinade for noodles and simmer for 1 min in a work over med high heat.
4. Blanch vegetables for 1 minute, drain and set aside.
5. Add reserved cooked lemongrass pork belly.
6. Toss noodles in sauce, add protein, and veggies until noodles sauce and darken up in the soy glaze.
7. Garnish with fresh chili, scallions, limes, sesame seeds, black pepper, and of course some Pork Panko for that extra umami crunch bomb 💣! 😂
And finish it off with a fresh sauce of lime and a sriracha zig zag!
