I’ve tried every method from baking soda, to adding vinegar and salt in boiling water but for me I only prefer one method. If you haven’t tried steaming your eggs, you will now. Try steaming them for 13 minutes then dunking them in an ice bath for 5 minutes. Then crack and lightly roll eggs to crush the shells more. The result is perfectly peeled eggs every time!

The cook book contains some asian favorites like Khai Jiao Thai Omelet (as featured), Kimchi Pancakes, Korean Beef Bulgogi, Soy-Braised Chicken Drumsticks and even Super Garlic Kimchi; all of which I'm totally making soon.
I made this Thai -style omelet from the book. It's super soft with fluffy layers of scrambled-like eggs . It has nice crispy golden edges and packs in some umami yumminess from the little hit of fish sauce that was beaten into the eggs .
Marbled Tea Eggs
Unlike the Japanese Ramen or soy marinated eggs that I made earlier- these savory eggs are hard boiled and steeped in a mostly black tea mixture with some soy sauce and spices. What creates the marbled tea veins is the cracking of the egg shells and letting the eggs steep in it’s cracked shell.

Trung Chien- A Vietnamese inspired omelette/egg pie. My dad used to make many different variations of this, sometimes with shrimp and sometimes with tofu but always with some fresh garden veggies like scallions, bell peppers, and onions.
It's a simple dish, almost like an egg quiche if I had to compare it with anything but made with vermicelli noodles and some Vietnamese ingredients like dried wood ear mushrooms, fish sauce, and shallots.
