Browned Butter & Maggi Fried Eggs- Best Fried Egg Recipe

Dump your rubbery eggs made on a non-stick pan and grab your cast iron skillet instead!

What’s my favorite fried egg recipe? Well it’s my crispy fried egg with butter and olive oil of course. The aroma without the butter just isn't the same and if you want your house guests or family to wake up in the morning, use a little bacon fat to replace the oil below! LOL

Cooking with a cast iron skillet will yield a beautiful delicate golden & crispy lacy edge to your egg whites. I simple breakfast completed with some local bread from some Maggi seasoning ...

A 5 minute breakfast served!



TIPS FOR FRYING EGGS:

** Local organic eggs have a deeper more orange colored yolk
** Use a cast iron skillet, they retain heat well when you crack cold eggs in and they don’t release any toxic PFOA’s into the air like traditional non-stick cookware.
** Make sure oil is peeping hot before putting eggs in. Otherwise eggs will stick to cast iron pan and you won’t get those super crispy golden
edges.


INGREDIENT
1 -2 eggs
1 tbs olive oil (light EVOO)
1/4 tbs of butter

GARNISH:

Black pepper

Few dashes of Maggi seasoning

PREPARATION
1. Heat oil over high heat, then add butter in pan til just about smoking. Swirl oil & butter around pan to make sure entire bottom of pan is coated with oil.
2. Crack egg(s) and gently crack into your pan and lower heat to medium. Tilt and swirl pan around to distribute oil and dislodge egg from sticking to the bottom of the pan.
3. If you're good with a pan, you can baste your egg white with of the oil/butter by tilting pan and spooning hot oil over egg whites.
4. Fry until the white is set. You can put an egg size lid over
the eggs to finish the top of the whites some if needed. The eggs
should have crispy browned edges, with a runny yellow/orange yoke (cook longer with lid on if you want your yolk more cooked through).

It should take about 2 minutes for runny yolks or 2 ½ - 3 minutes for medium yolks. Season with a little black pepper and a few drops of Maggi ontop of eggs in pan.

5. Remove pan from heat. Serve with a toasted and buttered slice of Peasant Bread or French Baguette slices. Add a little more Maggi if needed or a crack of salt / pepper.
