Vietnamese Umami Street Chicken Wings
These sweet & sour, spicy chicken wings are packed with a lot of flavor and crunch making them one of Vietnam's most popular street foods. Also known as Vietnamese Fish Sauce Wings (aka Canh ga chien nuoc mam), and don't let the fish sauce sway you, the flavor is subtle and it adds a nice umami flavor that's balanced with the caramelized sugar and fresh lime (just be sure to use quality fish sauce).
These sweet and savory wings are flavored in a sticky umami filled glaze made with caramelized sugar, crispy garlic, lime juice, and thai red chili! The only way to make these is with Redboat Fish Sauce. It’s a perfectly balanced fish sauce that isn’t too fishy or potent so it’s perfect for dipping sauces and glazes.

VIETNAMESE UMAMI GLAZE INGREDIENTS:
1/8 cup fish sauce
1/4 c sugar (half granulated white sugar, half brown sugar)
1/4 cup water
1-2 tbs lime juice
2 Thai red chili peppers
GARNISH:
1 Scallion (sliced thing for garnishing)
FRIED GARLIC:
1 tbs vegetable oil 5-7 garlic cloves (minced)
PREPARATION: 1. Heat up about 1 tbs of oil, fry garlic until browned and crispy and set aside.
2. Caramelize sugar, add water, fish sauce and lime juice.
3. Toss fried chicken wings with some of the glaze, thai red chili peppers, and fried garlic in a bowl. Garnish with some sliced scallions.
4. Take the remainder of the glaze and pour into a small bowl and add 1 sliced red chili pepper, 1 tbs sliced scallions and 1 tsp fresh minced garlic. Mix, and serve alongside wings.
5. Toss in wings, garlic and peppers in a bowl. Plate, and add some fresh cracked pepper and fresh chili and lime juice to garnish.
