Vietnamese Fish Sauce Wings- Recipe

Vietnamese Fish Sauce Wings (aka Canh Ga Chien Nuoc Mam). Bring in the New Year with these popular finger licking party wings 🤤.

The perfect balance of sweet, sour, and a little spicy…. These deep fried & crispy mouth watering wings are tossed in a super savory fish sauce glaze that’ll have you double dipping and licking your fingers clean! These savory wings are tossed in a sticky umami glaze of caramelized sugar, fish sauce, crispy garlic and thai red chili peppers!

The only way to make these is with Redboat Fish Sauce. It’s a perfectly balanced fish sauce that isn’t too fishy or potent so it’s perfect for dipping sauces and glazes.

INGREDIENTS

2 tbs fish sauce

1/8 c granulated white sugar

1/8 c half brown sugar

1/4 cup water

1-2 tbs lime juice

2 Thai red chili peppers (sliced thinly)

GARNISH
1 scallion bunch (sliced thing for garnishing)

FRIED GARLIC
1-2 tbs vegetable oil
8-10 garlic cloves (minced)


FRIED CHICKEN WINGS

10-15 pieces shallow fried wings or air fried wings


PREPARATION

1. Heat up about 1-2 tbs of oil, add garlic and fry until browned and crispy, set aside in a small bowl.

2. Add brown and white sugar, stir for about 1 min over high heat, then add water, 1 tbs fish sauce and lime juice and let simmer down & caramelize. Taste sauce, depending on the brand of fish sauce add other 1 tbs or more of fish sauce if needed (I used 2 tbs of Red Boat Fish Sauce). Then set aside.

3. Set fried chicken wings in a large bowl and pour some of the glaze into the bowl, add chopped thai red chili peppers, and fried garlic and toss evenly. Garnish with some sliced scallions.

4. Take the remainder of the glaze and pour into a small bowl and add 1 sliced red chili pepper, 1 tbs sliced scallions and 1 tsp fresh minced garlic. Mix, and serve alongside wings.

5. Plate the wings then add some fresh cracked pepper and fresh chili peppers. Serve with side of extra sauce and some fresh lime wedges to garnish.
