Vietnamese Baked Copper River Salmon- Recipe

Cooking fish can be intimidating for some but quality fresh salmon is super easy to cook and prepare.
Quick instructions-
Foil line a baking dish, rub the salmon with a little sesame oil, place fish skin down, add a slice or two of butter on top with a little fresh cracked pepper and salt and bake for about 12 min at 375. After baking- dress it with some light soy sauce and garnish with some fresh cilantro, chives, Thai red chili peppers, and jalapeños.
Serve it with a little Vietnamese nuoc cham dipping sauce, lemon wedges, and some white jasmine rice and you have yourself dinner under 30 minutes!
For the nuoc cham dipping sauce- you can either buy pre-made Cham dipping sauce -here- (that is my favorite pre-made brand) or you make your own, below is my mom’s family recipe!
Ingredients:
Alaskan Copper River Salmon (@alaskansalmoncompany)
Light Olive oil
1 tbs sesame oil
Black Pepper
Salt
1-2 tbs unsalted butter
Light Soy Sauce
Scallions or chives
Thai red chili or jalepeno
Preparation:
1. Preheat oven to 375 degrees, use middle rack.
2. Add some light olive oil on a baking pan, I lined my Pyrex glass baking with foil and drizzled some on top of it.
3. Place salmon skin side down in pan.
4. Brush some sesame oil on top of your salmon, then lightly salt and pepper it.
4. Add a few slivers of butter on top of your fish.
5. Bake for 10-15 min, depending how big your salmon piece is and how you like it. Mine was perfectly medium at 12 minutes with my oven.
6. Transfer to plate, sprinkle some light soy sauce ontop, then add some fresh herbs like chopped scallion, chives, and/or red chili, jalepenos.
