Veggie plant based “Impossible” Meatballs
Growing up my mom enjoyed cooking Italian foods while my father did all the Vietnamese foods. These meatless “meat”-balls are amazing and tastes just as good if not even better than real meatballs. It doesn’t seem like it now but I was a vegetarian for over 10 years so I love a good plant based meal every once in a while!
IMPOSSIBLE MEATBALL INGREDIENTS
2 12-oz packages Impossible ground meat
2 tsp garlic powder
1 tsp onion powder
1 onion diced
1 tsp basil
1 tsp parsley
1/2 tsp thyme
1/2 tsp oregano
3/4 tsp salt
1/2 tsp black pepper
PREPARATION
1. Preheat oven to 425°F.
2. Transfer impossible meats into large bowl. Sprinkle all ingredients to top of impossible meat and mix together all ingredients in a bowl with spatula.
3. Lightly mix with hands (don't overwork the meat or it'll turn into goop) and roll the meatball mixture into balls about 1½ - 2 tablespoons each.
4. Place on a baking sheet with parchment paper.
5. Crack some extra black pepper to top of meatballs.
6. Bake for 10-12 minutes until slightly browned and cooked through.
TOMATO SAUCE INGREDIENTS
1 can (28 oz) crushed tomatoes
1 tsp black pepper
1 cup diced onions
3 garlic cloves (minced)
4 tbs tomato paste
1 tsp red pepper flakes
1 tsp dry parsley
1 tsp dry basil
1/4 cup olive oil
TOMATO SAUCE PREPARATION
1. In a medium Dutch oven add 1/8 olive cup oil. After the oil heats up, add onions and salt until onions have turned slightly golden and fragrant (about 5-10 min).
2. Add garlic and tomato paste and mix well for about a minute.
3.Transfer crushed tomatoes from the can to cutting board and smash large tomatoes with a big knife or cut into smaller pieces, then pour tomato sauce from can and crushed tomatoes into your pot.
4. Add 1 cup of water to can and swirl around to dislodge all tomato sauce from can and pour into your pot
5. Add in all seasonings and after sauce gets to a boil lower heat to simmer.
6. Simmer with lid on for about 30-45 min until the tomato sauce doesn't taste like fresh tomatoes anymore.
7. Use an immersion blender to puree sauce smoother if needed.
*Cook pasta as directed in package/box, rinse and drain. Plate noodles on plates and add a couple scoops of tomato sauce on top of your cooked spaghetti noodles and place meatballs on top to serve.
