Vietnamese Caramelized Salmon aka “Ca Kho” is a common and popular dish in Southern Vietnam. Normally catfish or mackerel is used but we opted for salmon for it’s more mild taste.

We marinated it in a balanced savory & sweet sauce and cooked in a clay pot until you have a beautiful thick caramelized gravy. Just serve it with a side of hot jasmine rice and some boiled vegetables and you’re all set.

*Cooking it slow over low heat will yield the most tender and flavorful Ca Kho.
