Banh Chuoi- Vietnamese Banana Cake Recipe
Banh Chuoi aka Vietnamese Banana Cake is a popular street food in Vietnam but also a favorite sweet bake among many Vietnamese households. In this cake you can definitely see the French influence on Vietnamese cuisine.
And so you all know, it’s not really a cake per say… It’s more like if flan and pudding had a sponge cake baby :). lol It’s like a bread pudding that’s made with layers of hand torn white bread, coconut cream (or condensed milk) and sliced bananas.
Below is my mom’s recipe! Feel free to google other recipes for more precise instructions but this recipe is pretty forgiving and easy to make.
For 1 medium cake/pie mold, we used half of the recipe below:
INGREDIENTS:
10 bananas (sliced)
1 cup of coconut milk
1 large white sandwich bread loaf (or French bread, hand torn into small pieces)
1/2 cup butter (melted)
PREPAREATON
Mix all together, decorated with sliced banana’s on top.
Bake for 380 degrees for 1 hour.
