Broiled Lobster Splits- With Vietnamese Cilantro Butter-(Recipe)

BROILED LOBSTER SPLITS

Cooking lobster can be a bit intimidating but broiling lobster splits in the oven makes it much easier. Freshly frozen lobster splits are cleaned, split in half and ready to cook.  All I have to do is broil them for a few minutes and pour over some melted butter with garlic and cilantro.. mmm

For the herb butter, just mix in some fresh cilantro, minced garlic, a pinch of salt, lemon zest and a little bit of red chili.

CILANTRO BUTTER INGREDIENTS

  • 4 tbsp unsalted of clarified butter (melted)

  • 1/2-1 tbsp finely chopped cilantro

  • 1/2 tsp crushed red chile flakes

  • 2-3 cloves garlic (finely chopped)

  • 1 tsp or zest of 1 lemon or lime (optional, or optional 1-2 tsp lemon juice to taste)

  • 1/4 tsp sea salt

  • Freshly ground black pepper, to tast

BUTTER SAUCE PREPARATION

1. Melt unsalted butter in a small saucepan over medium heat. 

2. Remove from heat.  Then stir in the herbs and season with salt and pepper. 

LOBSTER PREPARATION

  1. Pre-heat oven broiler on medium high or high. 

  2. Place lobsters on a foiled or parchment lined cookie sheet, meat side up. 

  3. Evenly brush butter over lobster meat and lightly season each split with some salt and black pepper. 

  4. Place lobsters in the oven on the middle rack under the broiler. 

  5. Cook lobsters under the broiler for 4-7 minutes (Mine cooked in 5.5 minutes) until just barely cooked throughout and golden. Shells should turn a bright orange color, and flesh/meat should look opaque in color and cooked through (about 140°F, it will continue to cook a little when removed too, do NOT overcook).

  6. Remove lobsters from oven and let cool slightly.

  7. Spoon over some of the herb butter over the lobster splits and serve with fresh lemon wedges.
