Vietnamese Coffee- “ca phe sua da” recipe
Easily misinterpreted as “cafe soda”, it’s actually “ca phe sua da”, where “da” is translated as ice (= Vietnamese iced milk coffee).
Vietnamese coffee (Aka “ca phe sua nong” (hot), or “ca phe sua da” (iced)) is known for its extra caffeine kick and in Vietnam street coffee stalls use simple aluminum drip filters for this slow drip coffee favorite! I usually don’t drink coffee but since this is on the sweeter side, it’s definitely my go to coffee when I need my caffeine fix 😍
Traditional Vietnamese coffee is brewed in individual portions using a phin filter which catches the slow drip coffee of it's exquisitely aromatic black coffee.
Many restaurants use Cafe du Monde coffee for making Vietnamese coffee but today I'm
using a Vietnamese coffee, @nguyencoffeesupply. I like their "Loyalty" coffee because it's super strong and uses Vietnamese robusta beans which has about two times the amount of caffeine than regular coffee.
*Tip: In Vietnam this is served on the stronger and thicker side so we’re using 1 oz less water and a little more coffee grounds to make this.

INGREDIENTS:
3/4 cup water
2 tablespoons sweetened condensed milk (3 tbs if you like it sweeter)
3 slightly rounded tablespoons Vietnamese dark-roast ground coffee (I used the Trung Nguyen "Loyalty" Blend)
1 cup ice
PREPARATION
1. Boil water- Boil up some water just until it begins to boil
2. Add sweetened condensed milk- In a heatproof glass.
3. Remove screen from the phin filter and add coffee grinds and distribute it evenly into your filter (do not shake the phin filters or it will clog the holes)
4. Drop in filter to evenly spread out the coffee grounds.
5. Place filter over the glass.
6. Steep. Measure out 6 oz of hot water and begin by adding just 1-2 tablespoons from your 3/4 cup of hot water into the filter and let coffee grounds expand and bloom (about 30-60 seconds). When coffee begins to drip through the filter into your glass then add remaining
water. Place lid on filter and let coffee drip into glass.
7. Wait until coffee has stopped dripping (about 4-7 minutes), then remove the filter and stir until sweetened condensed milk is evenly mixed into the coffee.
