Soothing Lemon & Ginger Honey Elixir (Natural Cold / Sore Throat Remedy)

Do you have extra lemon and ginger laying around that you need to use up?

I've been using this all natural immune boosting honey, lemon & ginger elixir/remedy for years when I’m not feeling 100%. It’s a great natural immune booster when you think you have a cold or sore throat coming on. On the flip side, this also makes a great natural hot “herbal tea” too (just mix a 1 tbs or two in hot water, that’s it). If you’ve been in my close circle and I knew you were feeling sick, chances are I’ve given you a jar before (you know I’ll be tagging a few of you on insta)!

Ginger and lemon have been known to help keep colds away but honey is also a throat soother and has many health properties as well. By preserving the lemon, and ginger in honey it’s supposed to enhance it's healing properties.

Just eat a tablespoon of this mixture (eat the ginger/lemon pieces whole) or mix it in a cup of hot water or tea and eat the ginger/lemon pieces.

INGREDIENTS

  • Lemon

  • Organic fresh Ginger

  • Organic Honey



    PREPARATION
    1. Wash lemons and dice into smaller pieces or smaller wedges. Remove all seeds. I like cutting my lemons in smaller pieces so it's easier to eat (I like to eat a teaspoon or tablespoon straight out of the jar when I feel like something might be coming on).

    2. Peel ginger (I like using a spoon to scrape off the skin) and cut into small diced pieces or this slices.

    3. Sterilize or clean a pint jar and pack a layer of lemons then add a thin layers of honey, then add a layer of ginger, and add a thin layer of honey, and repeat this till you get to the top layer and add honey to the top (leave about 1/4" head space below the neck of the jar).

    4. Leave mixture out at room temperature for 24 hours. During this time the lemons/ginger will help break down and liquify the honey some. After 24 hours you can give it a good shake and place in the fridge. Continue to shake the mixture every day for a few days. Top with fresh honey if it doesn’t look like there’s enough liquid in your mixture.

    *I like to use this at least 72 hours before using it. Actually, I usually have a jar that is a couple months old that I tap into first and I make a new jar when it’s about halfway done. This keeps very long (honey and lemon are preservatives) so if you don't contaminate, it can last a very long time (months and months). I've had untouched jars for about a year that I forgot about and can still use.
