Spicy Sriracha Garlic Quickles: A Quick & Flavorful Pickle Recipe

If you love the zesty crunch of pickles but want something with an extra kick, these Asian Spicy Sriracha Garlic Quickles are the perfect solution. They’re incredibly easy to make and pack a punch of sweet, spicy, and savory flavors, making them a great addition to almost any dish. Top off a sandwich, salad, or just snack on them straight from the jar, these quickles will be your new favorite condiment and snack!

Ingredients:

  • Kirby or pickling cucumbers: Sliced into ½-inch crickle cut rounds

  • Garlic: 2-3 cloves, minced (jarred or fresh)

  • White vinegar: ½ cup

  • Apple cider vinegar: ½ cup

  • Water: 1 cup

  • Sugar: ½ cup

  • Jalapeño or other chili: Sliced (optional, adjust for desired heat)

  • Low sodium soy sauce: 2 tsp (or 1 tsp kosher salt)

  • Kosher salt: ½ tbsp for salting cucumbers

Instructions:

  1. Prep the Cucumbers:

    • Start by slicing your Persian cucumbers into ½-inch rounds.

    • Place the slices in a bowl and sprinkle them with ½ tbsp kosher salt.

    • Let them sit for a few minutes to draw out excess moisture, then rinse the cucumbers well a few times and strain completely. Pack the cucumber slices into a clean jar.

  2. Make the Brine:

    • In a saucepan, combine ½ cup white vinegar, ½ cup apple cider vinegar, 1 cup water, and ½ cup sugar.

    • Add a splash of soy sauce (or use kosher salt if you prefer).

    • Bring the mixture to a boil, stirring to dissolve the sugar.

    • Once the sugar is fully dissolved, remove the pan from heat and let the brine cool for about 10 minutes.

  3. Combine and Chill:

    • Pour the cooled brine over the cucumbers in the jar, making sure they are fully submerged.

    • Add half or a 2 halves of a jalapeño or any other fresh chili for a spicy kick.

    • Seal the jar and allow the quickles to cool before placing them in the refrigerator.

  4. Final Adjustments:

    • After refrigerating for at least 24 hours, taste your quickles.

    • You can adjust the flavor by adding more sugar for sweetness, more soy sauce for umami, or more salt for extra savory notes. Feel free to add any additional aromatics like fresh herbs, more garlic, or even a hint of ginger for extra complexity.
