Banh Mi Sandwich
Every year in during the first week of August we would take a trip to Carthage, MO for Marian Days which is a big pilgrimage & festival for tens of thousands Vietnamese American Roman Catholics. There would be dozens and dozens of tents from all over the US with food vendors and they would serve the BEST Vietnamese foods. One of the favorites for us kids were banh mi sandwiches.
A warm crispy baguette is filled with meat (usually pork), pate, cilantro, pickled carrots and daikon, jalepenos, and lightly slathered in mayo with a few dashes of Maggi! My favorite was always the BBQ pork (Xa Xiu).
INGREDIENTS
Xa Xiu (recipe -here-)
Cucumber
Pickled daikon and carrots (recipe -here-)
Mayonaise
1 french baguette
1 small bunch cilantro
1 jalepeno
1 red chili pepper
Butter lettuce
PREPARATION
Warm baguette in toaster oven in whole pieces (do not slice baguette in half) til lightly crisped on the outside and warm in the inside.
Cut baguette in half lengthwise so you can fill the baguette.
Lather some mayo on both sides of the baguette
Place a couple leave of clean lettuce on the bottom half of your baguette.
Place cucumbers all along baguette, then carefully place warmed meat on top, pickled daikon and carrots, a few sprigs of cut up cilantro.
Add jalepenos, red thai chili peppers and a few chopped pieces of cilantro and sprinkle a few dashes of maggi on the inside top part of the baguette.
Close baguette and serve immediately
