Asian Arugula Salad

I love asian inspired salads. This is so easy to make but you have to have all your fermented goodies lined up prior to making this salad.

INGREDIENTS

  • 2 cups Baby Arugula

  • Pickled daikon and carrots (recipe -here-)

  • 4 tbs Nuoc Cham fish sauce (recipe -here-)

  • 1 marinated Soy egg (recipe -here-)

  • 2 spoons of aged kimchi

  • 1 teaspoon black sesame seeds

  • 1 teaspoon white sesame seeds

  • Extra virgin olive oil

  • Fried onions (from the asian store, don’t use French’s!)

  • Lime wedge to garnish

PREPARATION

  1. Place arugula in bowl

  2. Lightly drizzle salad in zig zag motion across salad

  3. Spoon in 4 tbs of your Nuoc Cham sauce

  4. Carefully place kimchi, pickled daikon and carrots, and soy egg on top of salad

  5. Sprinkle sesame seeds on top of salad evenly

  6. Lime wedge for garnish, and lightly squeeze on salad for an extra zing!
