Recipe for Traditional Nuoc Cham:

Ingredients:

  • 5 cloves of garlic, minced

  • 2-4 Thai bird's eye chilies, finely chopped

  • 1/2 cup fish sauce

  • 2 limes (juice of 2 fresh limes)

  • 1/2 cup white sugar

  • 2-3 tbs of ACV vinegar

  • 1 1/2 - 2 cups of VERY warm water

Instructions:

  1. Prepare the Base: minced garlic and Thai bird's eye chilies and set aside. The key is to finely mince the garlic and chilies evenly in size to ensure they distribute evenly in the sauce.

  2. Balancing Act: To a bowl Add white sugar and hot water and stir til dissolved. Then add fish sauce and mix well.

  3. Then add the garlic and chili mixture. This is the crucial step, you want to add the chili and garlic last so they stay suspended in the sauce. Stir well and add lime juice and vinegar to create a well-balanced base of flavors.

  4. You can adjust the water quantity based on personal preference – some prefer a thicker sauce, while others like it a bit lighter and less salty/fishy. Add a little more water or lime juice to offset the saltiness if needed. Typically you want a salty sauce for a dipping or garnishing sauce.

  5. Serve and Enjoy: Transfer the Nuoc Cham to a serving dish and let the flavors meld for a few minutes before using. Serve it alongside traditional Vietnamese dishes, such as spring rolls, grilled meats, or noodle bowls.
