Philippe’s Banana Bread Recipe
Banana bread is a moist, sweet, cake-like bread. This is our classic banana bread fusion recipe (this is a little denser and more moist than traditional American banana breads).
I haven’t made the Vietnamese banana bread yet but feel free to check out the Vietnamese recipe in the photo for a more authentic Vietnamese banana bread.
PS- if you want to cut down sugar, you can remove the brown sugar and cut sugar down by one quarter or half of the sugar content below:
INGREDIENTS
1 cup all-purpose flour
1 cup granulated sugar
3 tbs cup brown sugar
1/2 tsp ground nutmeg or apple spice mix
1/2 tsp cinnamon
1/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
4 overly ripe bananas
2 large eggs
1/2 tsp vanilla
5 tablespoons unsalted butter
Cinnamon crust:
1 tsp white sugar
1/4 tsp cinnamon
PREPARATION
Preheat oven to 350°F.
Grease a glass loaf pan and half line with parchment paper to create a sling in the middle of the loaf.
In a medium bowl: whisk all dry ingredients
In a different large bowl smash the bananas. Then whisk in the egg until creamy.
Mix the banana mixture into the dry ingredient bowl and mix until all combined.
Then add melted butter and mix until just combined.
Pour the batter into loaf pan, leave about and inch of empty space for bread to expand.
Bake for about 1 hour until cooked through. The top of bread should crack through the middle and crust should look a nice medium brown color. Stick a toothpick through the center, if it comes out clean without any sticky moisture then it’s done.
